Papricaș de pui

One of my grandma’s favourite soups!

Full recipe below:

Supă de fasole verde (Serves 6-8 as part of a meal)

 

For the soup:

2 Tbsp. oil 

200 g or just under 1/2lbs of smoked sausage or pork belly 

400 g or two small onions, finely diced

1 red pepper, finely diced 

150 g or 1 parsnip, peeled and grated 

250 g or 2 small carrots, peeled and grated 

4 cloves of garlic, finely chopped 

200 g or 1 medium tomato, roughly chopped 

950 g or around 1 ½ lbs of yellow long beans, cleaned and cut into thirds 

2L of chicken stock, vegetable stock, or water

2 Tbsp. salt

Pepper to taste

 

To finish:

Small handful each of dill and parsley, roughly chopped 

Vinegar to taste



  1. Place a large pot over medium-high heat and add the oil. Now, place in the smoked pork and fry for a few minutes until the fat has rendered. Add the onions and cook until soft and translucent, about 5 minutes. 

  2. Add the red pepper, parsnip, carrots, and garlic. Cook until all the vegetables are soft, and there is very little moisture left in the pot. Add the remaining soup ingredients to the pot and bring to a gentle simmer. Simmer for 25-30 minutes or until the beans are very tender, and take the pot off the heat.  

  3. To finish, dump in the chopped herbs, check for seasoning, and stir in vinegar to your taste. It should be slightly sour. Eat immediately.
