Mămăligă de cartofi

This is a dish from the Bukovina region of Romania/Ukraine.

The addition of potatoes to your polenta makes for a lighter, creamier end product that is truly delicious!

Mămăligă de cartofi

250 g potatoes, peeled and cut into rough chunks

1 Tbsp. salt

1 l of water

250 g medium-ground polenta

1)        Take your potatoes and place in a pot and add salt and water. Bring to a simmer and cook until potatoes until fork tender. Take a potato masher and mash the potatoes in the water.

2)        Bring the pot back up to a simmer and then slowly add the polenta in a thin stream, stirring in rapidly. Bring up to a gentle simmer and cook for 25-30 minutes, stirring occasionally.

3)        Pour out onto a board and serve with fresh cheese, Slanina, and fresh onions.
